Harvested as late as possible to allow for maximum sugar concentration, the grapes are de-stemmed and pressed then fermented for a fortnight in small tanks. After racking, part of the wine is matured in barrels and part in stainless steel tanks. After six months, the final assemblage is made to accentuate the wineês best characteristics.
